Hidden Liver Greek Bowls

Some of the most nutrient dense foods we can eat are animal ~organs~ gross, I know... But there's a way to get more of these in your diet! In this recipe I hide the taste of beef liver in a protein and nutrient packed Greek style bowl!

This is my ultimate go-to meal, and it never gets old because there are so many ways change it up! This is also such an easy meal to do for your family or for guests, since everyone can build their own! For this recipe I'll share all of my favorite mix-ins and you can mix and match as you please.


This is my favorite way to hide the taste of liver, since there are so many flavors to mask it! However, you can also sub for any protein you want, (chicken, salmon, and lamb are my other got-tos) or even have a few options ready for your picky eaters. I always like to have a greens base and a grains base, so for this recipe I used arugula and brown rice. You could use any green you like for a green base and other grains like CouCous or farroh would make a great sub for rice!


Definitely don't forget the toppings! I love grilled veggies, but you can also bake or sauté. Red bell pepper, red onion, zucchini, and mushrooms are my personal favorites to mix in. I like to prepare my homemade sauces ahead of time, but you can also use store-bought if you're in a pinch. Finally, to top it all off, extra kalamata olives and fresh feta (not that pre-crumbled, dry sh*t). Not pictured here, but an optional touch would be to garnish with fresh herbs like mint, parsley, or dill.

Ingredients

  • 1 lb ground beef or lamb

  • 4oz beef liver

  • 2 tsp oregano

  • 1/2 tsp garlic powder

  • 1/4 tsp onion powder

  • 1/4 tsp red pepper flakes

  • 1/4 tsp salt and pepper

  • Brown rice (or couscous or farroh)

  • Arugula (or spinach, kale, romaine, or mixed greens)

  • Grilled (or sauteéd or baked) veggies - red bell pepper, mushrooms, red onions, zucchini

  • Greek yogurt tzatziki

  • Basil lemon hummus

  • Kalamata olives

  • Fresh feta

  • Fresh herbs - mint, parsley, dill

  • Other optional toppings: cucumber, tomato, pickled red onion, lentils, avocado, lemon, mint sauce, roasted red pepper feta spread


Directions

  1. Chop beef liver into small pieces.

  2. Add beef liver and ground beef to a heated pan. Cook until brown and liver blends in. Add oregano, garlic powder, onion powder, red pepper flakes, salt, and pepper.

  3. Cook your grains and vegetables.

  4. Prepare all other toppings

  5. Serve, build-your-own style and enjoy!
