Want the nostalgia of a rice crispy treat, without the sugars, seed oils, and other sh*t? Don't worry these are even better... the chocolate... the sea salt... drooling! Made with all high quality ingredients, these crispy, peanut buttery treats will satisfy all your sweet and salty cravings.
I'm a sucker for any and all Trader Joe's new items, but when I read the ingredients on their peanut butter crispy bites, I knew I had to make a better-for-you version. I still bought them though... and polished off the box... for research!
Protein peanut butter crispy bites
Ingredients
2 cups brown rice crisps
2 scoops vanilla protein powder
1/2 cup cashew butter
1/2 cup peanut butter
1/4 cup raw honey
3 tbsp coconut oil
3/4 cup chocolate chips
flakey sea salt
Directions
Line a square pan with parchment paper, and set aside.
Combine the rice crisps and protein powder in a large bowl
In a small pan, melt cashew butter, peanut butter, honey, and 2 tbsp coconut oil. Once well combined, mix in with dry ingredients.
Press mixture into your lined pan, refrigerate.
In a small pan, melt the chocolate chips and 1 tbsp coconut oil.
Pour chocolate over the dry mixture and smooth into an even layer.
Freeze bars for about 10 minutes, top with flakey sea salt, and cut into 1.5 inch squares.
Store in the fridge in an air tight container & enjoy!
