Okay I know I'm always talking about this, but this is literally the easiest way to get in extra nutrients when you don't feel like eating a salad for dinner... Sometimes we just crave pasta, k?
Nutrient-Packed Pesto
Ingredients
1/4 cup pine nuts
1/3 cup pepitas
4 garlic cloves
1 cup basil
1 cup arugula
1/2 cup spinach
1/4 cup nutritional yeast
2 tbsp Parmesan (or sub for more nutritional yeast)
1/4 cup lemon juice
1 cup olive oil (or as needed)
Directions
In a blender or food processor, combine the pine nuts, pepitas, and garlic.
Add the basil, arugula, spinach, nutritional yeast, Parmesan, and lemon juice. Continue blending.
Slowly add in the olive oil as you blend, until desired consistency is reached.
Serve with pasta, chicken, salmon, or anything else you desire!
