Lemon, Basil Arugula Side Salad

I guarantee, this will be the easiest salad you ever make in your life! All while feeling elevated and fresh!


My favorite dinner to make on a weekend or date night is a really delicious (usually not nutritious) pasta. So, without having to whip up a fancy veggie or salad, this is my go-to for the easiest side salad to pair with pasta, pizza, chicken parmesan, or whatever you're making!


Sometimes simplicity is the answer! This salad really is just arugula, fresh basil, parmesan cheese, lemon, olive oil, sea salt, and pepper. No need to complicate it! Enjoy it as a side salad or a first course to help support digestion and blood sugar spiking. Having the fiber from your greens before your carbs helps slow the delivery of glucose to the blood stream, which can decrease risk of diabetes and support weight loss or maintenance.

Lemon, Basil Arugula Salad


Ingredients

  • Arugula

  • Fresh basil

  • 2 tbsp lemon juice

  • 2 tbsp olive oil

  • 1/4 tsp flakey sea salt & freshly ground pepper

  • Parmesan cheese


Directions

  1. Add desired amount of arugula to your bowl.

  2. Chop basil and add to bowl.

  3. Combine lemon juice, olive oil, sea salt, and pepper in a small bowl.

  4. Toss arugula with desired amount of dressing and top with as much Parmesan cheese as your heart desires!
