One thing that I'll never cut out of my routine is my morning coffee. It's the thing I look forward to when I go to sleep, it's my reward after my morning workout, and it's my moment of peace before any chaos ahead. BUT one thing I have stopped doing is drinking coffee on an empty stomach.
Drinking coffee before having any sort of protein or fat is not ideal for healthy and happy hormones. Only issue is I’m not usually starving in the mornings, nor do I want eggs at 7am… so insert this little high-(healthy)fat, high-protein treat!
This nutty, chocolatey treat is great for snacking at all times of day or even for dessert, but my fav way to enjoy them is post-workout, pre-coffee! It’s the perfect breakfast snack to let me enjoy my coffee before my day starts and to hold me over until my later-in-the-morning balanced breakfast!
They are also very customizable so you can swap, add, or take out whatever you want! I personally loooove the taste of peanut butter but you could swap for almond butter or another less-inflammatory nut butter (just make sure to check the ingredients, there should but nothing but nuts and salt!). I love my raw honey, but maple syrup is a great swap if you prefer the taste! And for the base, I used almond flour for one batch (the lighter-colored bites) and oats for the other batch (the darker-colored bites). For the oats, I added them to the blender with the protein powder to create a more flour-like texture, then added the rest of the ingredients. The chocolate chips are optional, but the little chunks of semi-sweetness are my favorite part!
Make them however you like, store them in an air-tight container in the refrigerator and enjoy whenever and however you like!
Before-Your-Coffee Protein Bites
Ingredients
1/2 cup almond flour (or oats)
3/4 cup vanilla protein powder
1/4 cup flax meal
1 cup peanut butter (or almond butter)
1/4 cup raw honey
1/4 tsp sea salt
1/4 tsp cinnamon
1-2 tbsp coconut oil
1/4 cup dark chocolate chips
Directions
Add almond flour, protein powder, flax, peanut butter, honey, salt, and cinnamon to a food processor. Blend until well combined. (If you are using oats, blend them first, then add in the rest of the ingredients).
Add the chocolate chips and blend for another few seconds.
Add 1 tbsp coconut oil and continue blending until the mixture almost forms a cookie-dough like texture. Add the other tbsp if needed - I used 2 tbsp!
Roll the mixture into 1 inch balls until you’ve used it all up.
Refrigerate for 30 min - 1 hour before enjoying.
Store in an air-tight container in the fridge for up to a week! Enjoy as you please
