Balsamic Farro Bowl with Goat Cheese

The easiest "fancy" meal to impress your coworkers in the break room (or your dog in your home office)!

This is another one of my infamous recipes that came about simply from combining a hodge podge of leftovers from the fridge... but trust me, you don't want to miss it!

So unpopular opinion: I'm not a huuuuge balsamic fan... I'm more of a red wine vinegar gal myself, but this meal was impeccable might have changed my mind.
Anytime you add goat cheese & balsamic vinegar to a meal you're gonna be feeling like the fanciest mother f*cker in the room. So here's how to make it super simple: prep your farro ahead of time. I always have some sort of whole grain prepped in the fridge for salads, bowls & when I'm feeling snacky. I also always have a protein ready to go in the fridge. This day it happened to be ground turkey, which i wasn't stoked about to be honest. BUT balsamic saved the day. So if your ground turkey isn't prepped yet, cook that up first & then set it aside. Add more olive oil to the pan & saute the mini heirloom tomatoes & mushrooms. Saute the veggies to your liking & then add the ground turkey back to the pan. This is where you'll add the balsamic, & then just let the flavors combine for a few minutes.
To your bowl add arugula (I only had spinach in the photo), farro, & the balsamic veggies & turkey. Then top with crumbled goat cheese! I would also go even crazier and tell you to top it with chopped pistachios (or a good sub if you're unfortunately dairy-free).

Balsamic Farro Bowl with Goat Cheese


Ingredients

  • 1 lbs ground turkey

  • 2 tbsp olive oil

  • 1 tsp salt & pepper

  • 1-2 cups farro (cooked)

  • 4 cups arugula

  • 1 cup mini heirloom tomatoes

  • 1 cup mushrooms

  • 2 tbsp balsamic vinegar

  • 1/4 cup goat cheese

  • Optional: chopped pistachios


Directions

  1. Heat 1 tbsp olive oil in a large pan, brown the ground turkey, add salt & pepper to taste. Remove from the pan.

  2. Using the same pan, heat 1 tbsp olive oil. Add mushrooms & mini heirloom tomatoes, cook for about 5-7 minutes.

  3. Add the ground turkey back to the pan & add the balsamic vinegar, cook for another 2 minutes.

  4. To a bowl, add a cup of arugula, 1/4-1/2 cup cooked farro, & 1 serving of the balsamic turkey & veggies.

  5. Top with goat cheese & maybe some chopped pistachios! Get crazy with it you fancy chef!
