5-Minute, Low-Carb Lunch Wrap

I keep hearing this trend about a "girl dinner" .... ? I don't know... but I think this is my version of "girl lunch" - the easiest throw together lunch idea for a busy day!

Mondays are typically the days that are hardest weekday for me to eat my best, especially if I've been gone or busy all weekend. BUT I also feel like Monday kickstarts your week, so if I eat bad on Monday, I'm likely to have an off rest of the week... Sooooo, my Monday lunch typically looks something like this. And even though i'm calling this my "girl lunch," my husband enjoys it just as much! Just use all your favorite sandwich ingredients and you're sure to have yourself a satisfying meal.


As much as I try to avoid heavily processed meats, sometimes I just have to remind myself of the alternative - not eating lunch at all or settling on frozen or fast food. Look for deli meats without nitrates or additives & opt for organic if you can. (Remember, you're going to be fine if you break your eating rules every now & again.)

Ingredients

  • 1 head romaine lettuce

  • 4 slices deli turkey

  • 2 slices deli ham

  • 2 slices provolone cheese

  • 1/4 avocado

  • 2 tbsp hummus

  • 2 tbsp pepperoncini

  • 1/4 cup micro greens

  • sea salt & pepper


Directions

  1. Wash your romaine & select two large, trustworthy-looking leaves.

  2. Layer your ingredients (subbing to your taste & dietary restrictions) & voila, five minute lunch!
